  • 12 pre-made tarts
  • 1 (2.9-oz.) box lemon flavor pudding mix
  • 1 egg yolk
  • 3 egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 C. sugar
  • 1/2 tsp. vanilla extract

Preheat oven to 400 degrees F. Place tarts on greased baking sheet. Prepare and cook pudding mix according to package. Add 1 extra egg yolk. Allow mixture to cool slightly. Pour pudding into prepared crust. Refrigerate until set. In large bowl, mix egg whites and cream of tartar. Beat at high speed with mixer until egg whites begin to thicken. Gradually add sugar while beating. Add vanilla and beat well. Spread egg white mixture evenly over top of chilled tarts. Bake for 10 to 15 minutes or until golden. Chill for 1 hour or until cool before serving.
