Sweet Onion Brie Bundles
Ingredients
- 2 Tbs. butter
- 2 Vidalia Sweet onions sliced into 1 inch rings
- ½ C. sherry
- ¼ C. chopped pecans
- 2 sheet phyllo pastry
- 7 oz. brie wheel
- ½ C. red pepper
Directions
In a skillet over medium heat-high heat, melt butter. Add onions, salt and pepper: cook. Cook until onions brown Add sherry, bring to a boil. Reduce heat and simmer until liquid has evaporated about 10 minutes. Stir in pecans. On baking sheet, place phyllo pastry, top with brie. On top of brie, spread jelly. Brush phyllo edges over side of brie, leaving top bare. Place onion mixture on top of Brie. Bake at 350 until pastry is golden, about 15 minutes. Serve warm.
Makes 8 servings.
