Sweet Pea Soup With Avocados and Pea Greens

With homemade vegetable stock, this soup has a tasty foundation.

  • 3 ripe avocados
  • 1 C. fresh pea greens
  • 4 C. frozen peas
  • 3 C. vegetable stock (recipe below)

Boil stock then add peas and puree for 2 minutes smooth.  Add salt and pepper to taste, and slowly heat for three minutes.  Serve with avocados and pea sprouts.  

Vegetable Stock (For Pea Soup)


1 C. chopped carrots

1 C. chopped celery

1 C. chopped tomatoes

1 medium white onion chopped

10 peppercorns

1 bay leaf


Add all ingredients to a pot with 1-gallon cold water.  Bring water to a boil and cook on low heat for 45 minutes and then strain vegetables.
