  • 1 1/2 C. + 2 Tbs. flour
  • 3/4 tsp. sea salt
  • 3/4 C. +1 tsp. sugar
  • 1/4 C. vegetable oil
  • 1/4 C. olive oil
  • 2 Tbs. whole milk
  • 1/2 tsp. almond extract
  • 2 Tbs. cold butter
  • 3-5 small peaches, pitted and sliced 1/2 in. thick

Preheat the oven to 425 degrees. In a bowl, combine 1 1/2 C. flour, 1/2 tsp. salt, and 1 tsp. sugar. In a small bowl, whisk the oils, milk, and almond extract. Pour the oil mixture into the flour mixture. Combine gently with a fork just enough to dampen. Transfer the dough to the 11-in. tart plate. Use your fingers to press the dough to cover the bottom and up the sides to meet the edge. The dough should be 1/8-in. thick all around. Trim the excess dough and discard.

In a third bowl, combine 3/4 C. sugar, 2 Tbs. flour, 1/4 tsp. salt, and the butter. Pinch the butter into the dry ingredients until small crumbles form. Starting on the outside of the tart, arrange the peach slices in an overlapping concentric circle. Fill in the center of the tart with peaches. Sprinkle the butter mixture over the top and bake for 35 to 45 minutes. Thick, shiny bubbles should envelope the fruit and the crust should be slightly brown. Cool on a rack and serve warm or room temperature.
