Sweet Peach Marmalade

- 1 small orange
- 1 lemon
- 1/4 C. water
- 3 lb. peaches
- 1 (1 3/4 oz.) pkg. powdered fruit pectin
- 5 C. sugar
Quarter the orange and lemon, then remove the seeds. Cut the orange and lemon quarters crosswise into very thin slices. In a saucepan, put the orange and lemon slices. Add the water. Cover and simmer them over low heat for 20 minutes.
Meanwhile, peel, pit, and finely chop the peaches. In a 8 to 10 qt. pot, combine the orange and lemon mixture with the peaches and stir in the pectin. Bring the mixture to a full, rolling boil. Stir in the sugar and bring it to a boil again. Stir constantly. Let it boil hard for 1 minute, then remove from heat and quickly skim off the foam.
Pour the mixture into hot sterilized jars and seal. Process the jars in a boiling water bath canner for 5 minutes.
