Sweet Potato and Apple Bake
- 4 lg. sweet potatoes
- 4 Tbs. butter, melted
- 1 C. maple syrup (I used #3 dark for baking)
- 3 Granny Smith apples, peeled, cored and thinly sliced
- ground cloves
- 1 C. apple juice
Microwave the potatoes until done. Allow to cool then peel and cut them into 1/2-inch slices. Oil a deep 9x13-inch baking dish. Arrange half of the sweet potatoes on the bottom. Do the same with the apples. Pour 1/2 of the maple syrup on top and sprinkle with the cinnamon and cloves. Repeat the layers. Pour butter and maple syrup over the top layer of apples. Pour apple juice over all and sprinkle again with cinnamon and cloves. Bake for 40 minutes covered. Bake an additional 10 uncovered or until browned up.
