Sweet Potato and Pear
- 1-1/2 lbs. sweet potatoes, peeled and cut into 1/2 inch cubes
- 1/4 C. dried pears, finely chopped
- 1 tsp. unsalted butter, softened
- 1/8 tsp. white pepper, or to taste
Place sweet potatoes and pears in a steamer basket over boiling water. Cover saucepan and steam 15-20 minutes or until sweet potatoes are very tender. Transfer to a food processor or blender. Add butter, and salt and white pepper to taste. Puree until smooth.
