Sweet Potato and Pineapple Casserole

If you are a fond fan of the taste of sweet potatoes then you must try this recipe that also asks for pineapple to complete the yummy casserole.

Ingredients

  • 1 (3 lb.) whole sweet potatoes
  • 3 Tbs. brown sugar
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 eggs, beaten
  • 4 Tbs. melted butter
  • 1-1/2 c. crushed pineapple

Directions

Beat all together. Butter baking dish, place 1/2 of mixture in dish, dot with marshmallows then add remaining mixture. Bake at 350 degrees for 40 minutes.

  • against arguments for the traditional candied sweet potatoes I made this one anyway (healthier) and everyone loved it. Even my husband who opposed it the loudest. Great dish. This is it from now on.
