Ingredients
- 1 chopped onion
- 1 chopped bell pepper
- 1 cup pumpkin puree
- 1 cup water
- 1 can coconut milk
- 1 tablespoon coconut oil
- 1 tablespoon curry powder
- 1 teaspoon cinnamon
- 1 chopped sweet potato
- ¼ teaspoon ginger
- 1 teaspoon salt

Directions
Pour the coconut oil into a large pot and cook the onion and pepper for 8 minutes over medium heat. Add the pumpkin puree, water, cinnamon, ginger, salt, coconut milk, and curry powder. Stir and add the sweet potato. Stir well to coat the potatoes. Bring the pot to a simmer, cover the pot, and cook for 15 minutes.
