Sweet Potato Bread

The spices in this bread make it hard to eat just one piece.

Ingredients

  • 4 C. sweet potatoes, diced
  • 4 eggs
  • 1 C. vegetable oil
  • 2/3 C. water
  • 3 C. white sugar
  • 3 1/2 C. all-purpose flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground ginger
  • 1/2 tsp. allspice
  • 1/2 tsp. vanilla
  • 1 C. nuts (I use pecans)

Directions

Preheat oven to 350 degrees. Grease and flour 3 7x3-inch loaf pans. In a large bowl, mix together sweet potato, eggs, oil, water and sugar until well blended. In a separate bowl, sift together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the sweet potato mixture until just blended. Pour into the prepared pans. I sprinkle the top with raw sugar and more nuts. Bake for about 60 minutes. Loaves are done when toothpick inserted in center comes out clean.
