Sweet Potato Brownies

Got this recipe from my niece's co-worker. Everytime I fix they are gone within minutes.

  • 2 C. shredded raw sweet potatoes, about 3 medium
  • 1 C. butter
  • 1 C. packed brown sugar
  • 1 C. sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 2 C. all purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • Frosting:
  • 1 C. confectioners' sugar
  • 2 Tbs. soft butter
  • 2 Tbs. milk

Preheat oven to 350 degrees F. Sift flour, baking powder and sald and set aside.Cream butter and sugars until light and fluffy. Add eggs one at a time. Add vanilla. Gradually add flour mixture. Stir in sweet potatoes. You can also stir in 1 1/2 C. walnuts or pecans right now. Bake in 9x13 pan for 30-40 minutes.To make frosting, mix together ingredients and spead over brownies while warm.
