Sweet Potato Carrot Cake

And you thought carrot cake alone was delicious! Try mixing it with sweet potatoes and I promise you, you will never make carrot cake the same.

Ingredients

  • 2 C. sugar
  • 2 C. plain flour
  • 1 tsp. vanilla
  • 3 C. grated carrots or sweet potatoes
  • 1 1/2 C. oil
  • 2 tsp. salt
  • 4 eggs
  • 2 tsp. soda
  • 1 1/2 tsp. cinnamon

Directions

Sift flour, soda, salt and cinnamon. Add sugar and oil. Beat eggs and add to mixture. Add carrots or sweet potatoes. Bake at 350 degrees for 40 minutes. Use cream cheese icing.
