My mother made this casserole every Thanksgiving since I was a small child and is a favorite in our family. She usually doubled the recipe because it was always the first thing to disappear from the table. It is simple to make and so tasty. Some folks even state that it could pass as a dessert because it is so fluffy and delicious.

Ingredients

  • 3 C. cooked and mashed sweet potatoes
  • 1/2 C. granulated sugar
  • 2 eggs
  • 1 tsp. vanilla flavoring
  • Topping:
  • 1 C. dark brown sugar
  • 1 C. flour
  • 2 C. chopped pecans
  • 1/2 C. melted butter
  • 1/2 stick butter, cut into slices

Directions

Combine all ingredients and mix well. Pour into an 11x9-inch glass baking dish.To make the topping, mix ingredients together, except 1/2 stick butter. All the ingredients should be moist from the butter. Place this topping on top of sweet potatoes and dot with 1/2 stick of butter sliced thin. Bake at 350 degrees for 30 minutes or until golden brown on top. Double the recipe for a larger casserole.
