Sweet Potato Casserole

Ingredients
- 3 C. cooked and mashed sweet potatoes
- 1/2 C. granulated sugar
- 2 eggs
- 1 tsp. vanilla flavoring
- Topping:
- 1 C. dark brown sugar
- 1 C. flour
- 2 C. chopped pecans
- 1/2 C. melted butter
- 1/2 stick butter, cut into slices
Directions
Combine all ingredients and mix well. Pour into an 11x9-inch glass baking dish.To make the topping, mix ingredients together, except 1/2 stick butter. All the ingredients should be moist from the butter. Place this topping on top of sweet potatoes and dot with 1/2 stick of butter sliced thin. Bake at 350 degrees for 30 minutes or until golden brown on top. Double the recipe for a larger casserole.
