Ingredients

  • 3 C. cooked, mashed sweet potatoes
  • 1/2 C. sugar
  • 2 eggs, beaten
  • 1 tsp. honey
  • 1/4 tsp. salt
  • 1/4 C. margarine, melted
  • 1/2 C. milk
  • 1-1/2 tsp. vanilla extract
  • 1/2 C. firmly packed brown sugar
  • 1/3 C. all-purpose flour
  • 1 C. chopped pecans
  • 3 Tbs. margarine, melted

Directions

Combine potatoes, sugar, eggs, salt, 1/4 C. margarine, milk, vanilla and honey. Spoon into an ungreased 1 to 1 1/2 qt. baking dish. Combine brown sugar, flour, nuts and 3 Tbs. margarine, spread over sweet potato mixture. Bake at 350 degrees for 35 minutes.
