Sweet Potato Delight Casserole

The original recipe was my aunt's and years later we added the marshmallows, and started using the canned yams. If you try this recipe you will never make it any other way.

  • 1 29-oz. can sweet potatoes, drained and mashed
  • 1/4 C. brown sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 tsp. maple flavoring
  • 1/2 tsp. nutmeg
  • 1/4 C. cream
  • 2 Tbs. melted butter
  • Miniature marshmallows

Preheat oven to 350 degrees. Blend sweet potatoes, brown sugar, salt, cinnamon, vanilla, maple flavoring, nutmeg, cream, and butter together. Mix well. Add about 20 marshmallows. Stir well. Place in 2.5-qt. casserole dish. Cover top with marshmallows, Bake at 350 degrees for 20 minutes.
