Sweet Potato Gratin

A twist on a traditional potato gratin that's just right for Thanksgiving

  • 1 minced garlic clove
  • 2 Tbs. butter, softened
  • 1 Tbs. flour
  • 1 C. heavy cream
  • 4 yams, peeled and cut into 1/4-inch rounds
  • salt & pepper to taste
  • 1/2 C. bread crumbs
  • 1/2 C. grated parmesan cheese

In small skillet, cook garlic in butter until soft. Add flour, and cook for 3 minutes. Stir in heavy cream. Meanwhile in buttered casserole dish, layer 4 yams and sprinkle with salt and pepper. Pour cream mixture over layered yams and bake 1 hour at 350 degrees. Combine bread crumbs and parmesan cheese and sprinkle over casserole after 1 hour. Broil 1 minute. Serve immediately.
