Sweet Potato Nut Bread

Add the crunchiness of walnuts to your sweet potato bread recipe for a nutty flavor that is out of this world.

Ingredients

  • 1/2 C. soft butter or margarine
  • 2 C. sugar
  • 3 1/2 C. sifted flour
  • 2 C. cold mashed Jersey fresh sweet potatoes
  • 1 C. walnuts, finely chopped
  • 2 tsp. baking soda
  • 2/3 C. cold, strong black coffee
  • 1/2 C. shortening
  • 4 eggs
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 tsp. nutmeg

Directions

Cream shortening and sugar until light. Add eggs, one at a time, mixing well after each addition. Blend in sweet potatoes. Sift together dry ingredients, add nuts. Stir into creamed mixture alternately with cold coffee. Pour batter into 2 greased 9 x 5 x 2- inch loaf pans. Bake at 375 degrees for 1 hour or until they test done in the center. Cool 10 minutes. Remove from pans and cool completely.
