This is really a delicious sweet potato pie no one can resist.

Ingredients

  • l C. milk
  • 2 eggs
  • 2 Tbs. butter
  • l C. sugar
  • l tsp. vanilla
  • 3 sm. sweet potatoes

Directions

Boil potatoes. Peel and mash. Beat eggs and add other ingredients. Bake in pastry pie shell at 375 degrees until brown (about 30 minutes).

  • This is excellent. I did change the sugar to 3/4 cup plus 1/4 cup brown sugar. I just like brown sugar with sweet potatoes. I had to bake it longer than 30 minutes. It will vary because of the consistency of the filling. I will serve this to guests.
