Ingredients
- 3 Tbs. all-purpose flour
- 1 unbaked 9-in. pastry shell
- 1 2/3 C. sugar
- 1/4 tsp. ground nutmeg
- pinch of salt
- 1 C. cooked sweet potatoes, mashed
- 2 eggs
- 1/4 C. light corn syrup
- 1/2 C. butter
- 3/4 C. evaporated milk
Directions
Cook (boil) sweet potatoes until tender. Drain and mash. In a large mixing bowl, combine the flour and sugar. Add mashed sweet potatoes, eggs, corn syrup, nutmeg, salt, butter, and evaporated milk; mix well. Pour into the unbaked pastry shell. Bake at 350 degrees for 55 to 60 minutes.
