A healthier version of sweet potato pie without crust and a nice twist.

  • 2 lg. sweet potatoes
  • 6 sachets Stevia packets
  • 1 Tbs. butter
  • 1/4 C. evaporated milk
  • 1 lg. egg white
  • 1 tsp. pure vanilla extract
  • 1 tsp. ground cinnamon
  • 1/4 tsp. allspice, ground
  • 1 tsp. lemon juice
  • 1/4 cup. Superior rum
  • 1 Tbs. golden raisins
  • 3/4 C. pecan pieces
  • 1/2 C. Kraft Jet Puffed Marshmallows

Heat oven to 350 degrees. Spray a 8x8-inch pan with non-stick spray. In a small bowl place raisins and rum and let raisins soak. Wash sweet potatoes and place on a cookie sheet and bake in the oven until soft in center (on 350 degrees for around 45 minutes), Peel and mash potatoes.

Place potatoes in a medium sized bowl and add softened butter, vanilla, nu stevia, lemon juice, cinnamon, all spice and milk and mix well. The consistency should be thick and runny like apple sauce. Stir in rum, raisin and egg white.

Spoon half the mixture into sprayed pan and pour in marshmallows. Next spoon on the remaining mixture and top with pecans.Bake uncovered for 25 minutes or until done. Pecans will darken slightly.
