Sweet Potato Pound Cake

A light and fluffy and packed full of flavor pound cake. It is delicious and very creative.

Ingredients

  • 1 C. shortening
  • 1/2 C. melted oleo
  • 3 1/2 C. all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 2 1/2 C. chopped pecans
  • 1 1/2 C. mashed sweet potatoes (No. 2 can)
  • 1/2 tsp. almond extract
  • 6 eggs
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. allspice
  • 1 1/4 C. buttermilk

Cream shortening and oleo; add sugar; beat well. Add eggs, 1 at a time. Beat well each egg (1 minute each). Combine next 7 ingredients. Stir well to cream mixture, alternately with buttermilk beginning with flour and ending with flour, Tbs. at a time. Grease and flour 1 (10 inch) bundt pan. Sprinkle nuts over bottom of pan and on top of cake. Bake at 350 degrees for 1 hour and 10 minutes. Cool 10 minutes in the pan
