Sweet Potato Pudding

This is an interesting take on sweet potatoes. We are all so use to eating them in a casserole type dish. This is a great tasting pudding. A must try!

  • 1 large. sweet potato, grated
  • 1 C. sugar
  • 1 C. milk
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 stick butter, melted
  • 3 eggs

Beat sugar, eggs, milk, add other ingredients. Mix well. Pour into a dish greased with a little butter. Bake at 350 degrees for 30 to 45 minutes.
