  • 3 sweet potatoes
  • 1 clove garlic, minced
  • 1 1/2 T. olive oil
  • 1/4 tsp. dried thyme
  • 1/8 tsp. crushed red pepper
  • 1/4 tsp. salt

Preheat your oven to 400°F. Peel each sweet potato and cut in half crosswise. Slice into one-inch wedges. Transfer wedges to a rimmed baking sheet and drizzle with oil. Sprinkle with garlic, thyme, red pepper, and salt. Toss to coat. Bake for 30 minutes. Serve immediately.
