Sweet Potato With Pineapple

  • 6 sm. small sweet potatoes
  • 1/3 as much pineapple as potatoes, sliced
  • 1/3 C. honey
  • 1/4 C. hot water

Boil the potatoes with the skins on. When cool, peel and cut them into pieces one-quarter of an inch thick. Mix honey and 1/4 cup hot water. Just cover the bottom of a baking dish with the mixture, then add the sweet potatoes and sliced pineapple. Pour the remaining honey mixture over the potato and pineapple mixture and bake for 10 minutes in the oven at 400 degrees.
