Sweet Potatoes On The Grill

Ingredients
- 3-4 sweet potatoes
- 1 tsp. cayenne peppet
- salt to taste
- 2 tsp. lime zest
- 1 tsp. pepper, freshly ground
- 1/4 C. canola oil
- 1/4 C. fresh cilantro, finely chopped

Directions
Clean the potatoes with water, leaving the skins on
Boil in salted water until tender
Remove from heat and allow to cool
Slice into wedges (6-8 pieces per potato)
Preheat the grill on medium and brush wedges with oil and season with salt and pepper
Mix cayenne, lime zest and cilantro in a bowl
Cook wedges until golden on all sides
Remove from grill onto a plate and season with cliantro mixture
