  • 1 C. yellow cornmeal
  • 1 C. oat flour
  • 1 C. buttermilk
  • ½ C. pumpkin puree
  • ¼ C. bourbon
  • 1 egg
  • 1 Tbs. coconut oil, melted
  • 1 ½ tsp. bourbon pure vanilla bean paste
  • 1 Tbs. butter
  • 2 tsp. baking powder
  • ¼ tsp. kosher salt
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ tsp. ground ginger
  • ⅛ tsp. ground cloves

Preheat the oven to 400 degrees. In a bowl combine the cornmeal, oat flour, baking powder, salt, and other spices. In another bowl, combine the egg, puree, buttermilk, bourbon, vanilla, coconut oil, and paste. Pour the wet ingredients into the dry ones and mix. Grease a skillet or pan with the butter and pour in the batter. Bake the bread for 25 minutes or until it’s cooked through. Let it sit at least ten minutes before cutting into it.
