Ingredients

  • 2 C. cooked quinoa, chilled
  • 1/2 C. fresh blueberries
  • 1/4 C. strawberries, sliced
  • 1/4 C. mango, chopped
  • 2 Tbs. oil
  • 1 Tbs. pomegranate seeds
  • 1 tsp. honey
  • 1/2 tsp. cardamom
  • 1 Tbs. fresh mint leaves, chopped
  • 3 C. fresh spinach leaves

Directions

Lightly toss together the quinoa and the fruit, making sure not to crush the berries. Combine the oil, pomegranate seeds, honey, and cardamon in a container with a lid. Shake until well combined and add to the salad. Toss to evenly coat. Put the quinoa and fruit mixture on top of a bed of spinach leaves and top with shredded mint leaves.
