  • 1 packet active dry yeast
  • 2 C. hot water
  • 3 T. vegetable oil
  • 1 tsp. salt
  • 1 T. sugar
  • 4 C. flour
  • 3-4 chicken breasts, cooked and shredded
  • ¾ C. barbecue sauce
  • 1 C. mozzarella cheese, shredded
  • 1 C. cheddar cheese, shredded
  • ½ red onion, sliced
  • Fresh cilantro for garnish

In a large bowl, combine water and dry yeast until dissolved. Add in oil, salt, sugar, and about half of your flour. Either use a mixer with a dough hook or knead with your hands, gradually adding in remaining flour until smooth. If dough is too sticky, add as much additional flour as you need. Cover and set aside for about 20 minutes. In a bowl, combine chicken with ¼ cup f barbecue sauce and set aside. Roll out dough for 2 pizzas and bake crusts for 15 minutes at 450 degrees. Spread on sauce, chicken, onions, mozzarella, and cheddar; bake for an additional 15 minutes, take out of oven, and top with cilantro.
