  • 1 Tbs. olive oil
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 large onion, chopped
  • 1 Tbs. fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 (49 1/2 oz.) can chicken broth
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 (14 1/2 oz) can diced tomatoes
  • 1/2 C. ditalini pasta, uncooked
  • 1/2 C. roasted sweet red pepper strips
  • 1 Tbs. red wine vinegar

In a large sauce pot, heat the oil. Add the carrots, celery, onion, parsley, and garlic. Cook until tender, then add the broth, beans, tomatoes, and pasta. bring to a boil. Cover and cook for 15 minutes, or until pasta is done. Add the peppers and vinegar. Stir to combine and heat through.
