Sweet & Sour Carrots

Sweet and sour carrots are a great addition to any oriental themed dinner. I like to serve them with an orange chicken main course and a side of white rice.

  • 2 lb. bag of carrots
  • 1/3 C. sugar
  • 1/3 C. vinegar
  • 1/3 C. oil
  • 1 onion, sliced
  • 1 green pepper, cut in strips
  • 1 can tomato soup

Wash and prepare carrots, steam until done. Combine carrots, sugar, vinegar, oil, onion, and green pepper in a large bowl. Marinate overnight. In the morning, add the tomato soup. Pour into casserole dish. Cook at 375 degrees for 20 minutes.
