  • -4 large yams or sweet potatoes
  • -3/4 stick butter
  • -2 C. brown sugar
  • -1/4 tsp. ground cinnamon
  • -3 T. maple syrup
  • -1/4 C. heavy whipping cream
  • -1 tsp. vanilla extract
  • -1/8 tsp. ground nutmeg

Preheat oven to 350 degrees F. Place yams in a large saucepan and cover them with water. Heat to a boil or until tender. Drain and let cool. Peel the potatoes and slice into thick chunks. Set aside. Melt butter in saucepan and stir in brown sugar, cream, maple syrup, nutmeg, and cinnamon. Cook for 2 minutes or until creamy. Add the vanilla and mix lightly. Layer the cut yams in a baking dish and pour the creamy mixture all over it. Cook for 20 minutes or until golden brown.
