  • 1 medium pineapple, diced
  • ¾ lb. shrimp, peeled and deveined
  • 2 garlic cloves, chopped
  • 1 Tbs. sesame oil
  • 2 tsp. coconut oil
  • Red pepper flakes
  • Salt and pepper to taste
  • Lemon to garnish

Heat the coconut oil in a large skillet on medium-high. Season the shrimp with salt and pepper. Saute the garlic for a few minutes until fragrant. Toss in the shrimp and cook for 2-3 minutes before adding ½ C. of the pineapple. Add in the sesame oil and red pepper flakes. Stir the dish for 5-10 more minutes until the shrimp is pink and tender. Squeeze a lemon wedge before serving.
