  • 6 mini pie crusts, baked and cooled
  • 5 egg yolks
  • 3/4 C sugar
  • 3 Tbs. cornstarch
  • 1 1/2 C hot milk
  • 1/2 tsp. vanilla extract
  • 1 Tbs. unsalted butter
  • 1 Tbs. heavy cream
  • 2 pints strawberries, halved
  • 1/3 C strawberry jelly

Bake premade mini pie crusts according to instructions. When finished, let it cool and set aside.

In a bowl using a mixer, beat egg yolks and sugar for four minutes, or until very thick. Reduce to a lower speed and add the cornstarch. Slowly pour the hot milk into the egg mixture.

Pour the mixture into a saucepan and cook over low heat until the mixture thickens, about 5 to 7 minutes. Stir in vanilla extract, butter, and heavy cream. Pour the custard through a sieve into a bowl and refrigerate until cold.

Spread a little strawberry jam on the bottom of the pie shells. Once the cream is cold, fill the shell with it. Place strawberries on top of cream.
