  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 3 cups flour
  • 2 ½ cups grated zucchini
  • 3 eggs
  • 1 teaspoon nutmeg
  • 3 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Preheat the oven to 325 degrees F and grease two bread pans. Mix the flour, baking powder, salt, nutmeg, cinnamon, and baking soda. In a separate bowl, beat the eggs, vanilla, sugar, and oil together. Combine the two bowls and stir everything together. Stir the grated zucchini into the bowl and transfer the batter into the loaf pans. Bake for 50 minutes.
