  • ¼ C. lemon juice
  • 2 tsp. gelatin, unflavored
  • 1 ½ C. sugar
  • 1 C. orange juice
  • 9 egg yolks
  • 3 T. orange zest
  • 1 T. lemon zest
  • 1 ½ sticks butter, unsalted
  • 1 box white cake mix
  • 1 can sweetened condensed milk

Prepare and bake cake mix in two round cake pans according to package directions. When completely baked, poke holes throughout cakes and pour half of the can of sweetened condensed milk over each. Refrigerate and allow to cool completely. In a small bowl, mix together lemon juice and gelatin; set aside for at least 20 minutes. In a saucepan, whisk together orange juice, sugar, egg yolks, orange zest, and lemon zest. Cook over medium heat, add butter, and continue to whisk until it begins to thicken. Remove from heat and whisk in gelatin until completely dissolved. Cover and refrigerate until cool. Remove one cake from baking pan and flip onto serving dish. Spread orange curd evenly on cake, top with other cake, and finish spreading curd.
