Serve up these strawberry whole-wheat pancakes for a romantic start to your day! Chock-full of healthy ingredients, these pancakes will love you as much as you love them--and what better way to celebrate your love than with a heart-y start to the most important meal of the day? Ingredients

  • 1 C. whole-wheat flour
  • 1 C. all-purpose flour
  • 2 tsp. baking powder
  • 1 Tbs. ground flaxseed
  • 2 Tbs. wheat germ (optional)
  • 1/2 tsp. salt
  • 1 egg
  • 3 Tbs. melted butter
  • 2 C. buttermilk
  • 1/2 C. chopped strawberries (plus extra for the topping)

This is an easy mix- combine the dry ingredients (flour, baking powder, flaxseed, wheat germ, and salt) in a large bowl and mix. If you are using dry buttermilk, add the powder to this step as well. Add the wet ingredients (egg, butter, and buttermilk), and fold in the chopped strawberries. If you used dry buttermilk, remember to add the water at this point! Heat up a flat griddle or pan over medium heat and spray with canola oil. If using egg shapers for the pancakes (pancake molds, or cookie cutters could work, too!) make sure to spray the insides, as well, so the batter doesn't stick. When the pan is hot, drop a large spoonful of batter into the molds until they are half-full. When bubbles appear over the entire surface of the pancake, it's time to flip! Cook for a few minutes on the other side, until golden-brown and cooked through. If not using molds, simply drop spoonfuls onto the griddle and try some free-hand designs! Let out your inner artist. Top with sliced strawberries and drizzle with maple syrup. The pancakes already have an addictive buttery taste, but you can add more if you'd like! Be creative with your toppings- banana, pumpkin or apple butter, honey, cinnamon sugar, or peanut butter would all taste amazing on these pancakes. Make this a breakfast as unique as you are. Serves two very hungry people.
