  • 16 lb. turkey, neck and giblets removed
  • 1/4 C. olive oil
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 tsp. ground thyme
  • 1 C. honey
  • 1/2 C. butter, melted
  • 2 tsp. dried sage leaves
  • 1 T. minced fresh parsley
  • 1 tsp. dried basil
  • 1 tsp. salt
  • 1 tsp. ground black pepper

Preheat your oven to 325°F. Brush the entire turkey with olive oil, including the cavity. In a small bowl, mix together salt, 1/2-teaspoon of pepper, and thyme. Rub the turkey with this mixture. Transfer to a large roasting pan and roast for two hours. In a medium bowl, mix together honey, melted butter, sage, parsley, basil, salt, and pepper. Brush the turkey with this mixture and return to the oven. Continue baking for two hours or until a meat thermometer reads 180°F. Let stand for 15 minutes before carving.
