This quick and easy dessert doesn't need blueberry pie filling (although you could easily substitute a can in if berries aren't in season). This sugary berry-lemon blend is topped with a fluffy and buttery layer of cake. Yum!

  • 1 (15 oz.) box yellow cake mix
  • 4 C. fresh blueberries
  • 3 T. cornstarch
  • ¾ C. sugar
  • 3 T. lemon juice
  • 1 stick butter, sliced

Preheat oven to 350 degrees. In a bowl, toss blueberries with cornstarch, sugar, and lemon juice. Transfer to the bottom of a greased baking dish. Sprinkle cake mix over blueberries and top with slices of butter. Bake for 45 minutes to an hour until golden.
