Tasty, cheesy, steak with a yummy sauce!

  • 1/2 to 3/4-lb. boneless beef round steak, cut 3/4-in. thick
  • 2 Tbs. all-purpose flour
  • 1/2 tsp. salt
  • one 10-oz. can tomatoes and green chilies
  • 1/4 C. chopped celery
  • 1/4 C. chopped carrot
  • 1 Tbs. chopped onion
  • 2 Tbs. shredded Monterey Jack cheese

Cut meat into 2 portions.  Mix flour and salt; pound into meat.  Set aside remaining flour.  Brown meat in a small amount of hot oil, about 1 tablespoon.  Place meat into a shallow baking dish.  Blend reserved flour mixture into drippings in skillet.  Add tomatoes and green chilies, celery, carrot, and onion. Cook, stirring constantly, until mixture boils.  Pour over meat.  Cover and bake in 350 degree oven for 1 hour or until meat is tender. Sprinkle cheese over meat.
