Swiss Vegetable Medley

Ingredients
- 1 (16 oz.) bag frozen broccoli, carrots, and cauliflower
- 1 can cream of mushroom soup
- 1 C. shredded Swiss cheese, divided
- 1/3 C. sour cream
- 1/4 tsp. black pepper
- 1 can French fried onions, divided
Directions
Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper, and 1/2 can onions. Pour into 1-quart casserole dish. Bake covered at 350 degrees for 40 minutes. Top with remaining cheese and onions. Bake uncovered for 5 more minutes.
Even easier: After mixing ingredients, cook in microwave 10 minutes on bake setting. Stir, then bake in regular oven as directed to melt cheese and crisp onions.
