Swordfish with Tomato Coulis
Ingredients
- 4 8-oz. swordfish steaks
- 1 tsp. extra virgin olive oil
- 1 Tbs. fresh lemon juice
- 2 tomatoes, chopped
- 1/4 C. canned tomato sauce
- 3 Tbs. onion, chopped
- 1/2 C. fresh bread crumbs
- 1/2 tsp. ground oregano
- 1/4 tsp. dried rosemary
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Directions
Place all ingredients but swordfish into a blender. Blend until smooth. Place swordfish on a grill and grill until cooked through. Serve swordfish with sauce spooned over the top.
