Tabbouleh is a Middle-Eastern dish with a bulgar wheat base, served over lettuce.

Ingredients

  • 4 C. cooked bulgur wheat (cook according to package instructions)
  • 1/4 C. olive oil
  • 1/4 C. lemon juice
  • 4 Roma tomatoes, diced
  • 1/2 C. fresh mint, chopped
  • 1/2 C. fresh parsley, chopped
  • 1 cucumber peeled, seeded and diced
  • 1 small jar artichoke hearts drained and diced Salt and pepper to taste

Directions

Place cooked bulgur wheat in a large bowl and allow to cool. When bulgur wheat is cool add remaining ingredients and stir well. Chill for 2 - 3 hours before serving. Serve chilled

  • Tabbouleh is basically a Parsley salad,so I would use 4 cups of Parsely, 2 cups of mint & less than 2 cups of cooked Bulgur. Definitely more Olive oil & lemon juice.No cucumber or artichoke, just either scallions or a small diced onion.Bon apetit.
