Taco Chicken
Ingredients
- 2-4 boneless chicken breasts, diced or cooked and shredded (can use leftovers)
- 2 Tbs. oil
- 1/2 medium onion, chopped
- 1 green pepper, chopped
- 1 pkg. taco seasoning mix
- 1 C. water
- 1 can corn
- 1 can red kidney beans
- 1 can black-eyed-peas
- 1 can pinto beans
- 1 can garbanzo beans
- 1 16 oz. jar salsa
- Garnishes:
- Sour Cream
- Shredded Cheese
- Crushed Corn Chips
- Sliced Olives
Directions
Sauté onion and green pepper in oil with chicken until tender. Add taco seasoning mix and Water and bring to a boil. Add remaining ingredients (do not drain first!) and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes. Serve in bowls and garnish as you like.
