- 2 lb. russet or red potatoes, cut into small chunks
- 1/3 C. vegetable oil
- 1 1 oz. pkg. Taco Spices & Seasonings
In large resealable plastic bag, place potatoes, oil and Taco Spices & Seasonings. Seal bag and shake to coat. Spray 13x9x2-inch baking dish with nonstick cooking spray and bake in 400 degree oven for 45 minutes, stirring after 20 minutes.
Variations: May substitute 1 1.48 oz. pkg. Lawry's Spices & Seasonings for Chili. For Cheesy Chili Potatoes: Top with 1 C. shredded cheddar cheese during last 10 minutes of baking time.
