Taco Soup

A very easy and delicious soup. Has a very appetizing eye appeal to it. I have made it many times espiecally for my 5 year old. Plus this recipe can be easily added to for a bigger crowd.

Ingredients

  • 1 lb. ground beef
  • 1 large onion, diced
  • 1 can corn
  • 1 can pinto beans
  • 1 can diced tomatoes
  • 1 can light red kidney beans
  • 1 can diced rotel tomatoes with green chilies, mild
  • 1 can hominy (optional)
  • 1 can beef broth
  • 1 pkg. taco seasoning
  • Garlic powder to taste
  • Lawry's seasoned salt to taste
  • 1-2 pkg. fancy shredded 4 cheese Mexican cheese
  • 1 16 oz. container sour cream
  • 1-2 bags corn chips

Directions

Brown ground beef in a large skillet until just done, season with garlic powder and seasoned salt. Drain off fat. Open all cans and do not drain the cans. Dump all of the cans - liquid and all - into an 8 quart soup pan, add ground beef, onions, taco seasoning, and beef broth. Cook on medium to medium-low heat until onions are done. Serve in large soup bowls and top with corn chips, sour cream, and cheese.

  • This is a really good, easy to make, soup. It is a very good alternative to chili. Be certain to serve with shredded cheddar cheese, sour cream and crushed tortilla chips.
