  • 10 chiles
  • 3 pounds boneless pork shoulder, sliced
  • 8 peeled garlic cloves
  • ¼ cup sugar
  • 3 tablespoons achiote paste
  • 1 cup vinegar
  • 3 ounces salt
  • 1 onion chopped
  • 2 chopped red chiles
  • ¼ cup chopped mint
  • 3 tablespoons lime juice
  • 1 pineapple, peeled, cored and cut into rings
  • 16 tortillas

In a medium saucepan over medium-high heat, combine the chiles and 2 cups water to a boil. Remove from the heat and allow the chiles to cool for 30 minutes. Put the pork in a large bowl and purée the chiles and soaking liquid, garlic, sugar, vinegar, achiote paste, salt, and half the onion for 2 minutes. Pour this over the pork and coat the meat completely. Chill for 3 hours. Combine the mint, pineapple, lime juice, and remaining onion in a bowl and season with salt. Remove the pork from the marinade and grill on low heat for 12 minutes on each side. Grill the tortillas for 30 seconds on each side and slice the pork into strips. Assemble the tacos with pork and seasoned onions.
