Tamale Pie
Ingredients
- 1 to 1-1/2 lb. lean ground beef
- 1/4 C. chopped onion
- 1 C. diced celery
- 1 clove minced garlic
- 1 1-lb. (12-oz.) whole tomatoes
- 3/4 C. corn meal
- 1 1-lb. can whole kernel corn
- 1 4-oz. can chopped ripe olives
- 1 Tbs. chili powder
- 1 tsp. Worcestershire sauce
- Salt to taste
- 1/3 C. grated cheddar cheese
Directions
Crumble beef into a heated skillet. Cook over moderate heat until browned. Add onion, celery, and garlic and cook over medium heat for 5 minutes. Drain grease.
Drain tomatoes. Save 3/4 C. of the tomato juice and mix it with the cornmeal. Cut tomatoes into small pieces. Add cornmeal mixture. Cook over low heat, stirring constantly, for 5 minutes. Add corn and its liquid, olives, chili powder, Worcestershire sauce, and salt to the meat mixture. Mix well. Add tomato mixture and stir.
Spoon mixture into a 2-qt. casserole. Sprinkle cheese on top. Bake uncovered at 375 degrees for 30 minutes.
