Ingredients
- 16 oz. chicken breasts, boneless, skinless
- 1/2 C. yogurt, plain, low fat
- 1/4 C. bread crumbs, dry, grated
- 1 tsp. paprika
- 1/2 tsp. salt
- 1 Tbs. olive oil
- 1 Tbs. lemon juice
- 1 C. chicken broth, fat free
- 1 tsp. garlic, raw
- 1/2 C. water
- 2 Tbs. lemon juice
Directions
Pound the chicken breast until it is 1 inch thin. Place it in a Ziploc bag with the yogurt and place in the refreigerator for at least 8 hours, up to 24.
Remove the breasts and rinse. Place the olive oil and lemon juice in a frying pan. Combine the crumbs, paprika and salt. Dipt he chicken in the crumb mixture. Put the chicken in the pan and brown until cooked. Remove to a plate.
Add the garlic, broth and water tot he frying pan and simmer until reduced and thickened. Put the chicken back in for approximately 3 minutes.
