Tangy Green Beans

Add some cider vinegar, red peppers, garlic powder and spicy brown mustard to your green beans to get a tangy taste.

Ingredients

  • 1 1/2 lb. fresh green beans, trimmed
  • 1/3 C. diced sweet red pepper
  • 4 1/2 tsp. olive or canola oil
  • 4 1/2 tsp. water
  • 1 1/2 tsp. white wine vinegar or cider vinegar
  • 1 1/2 tsp. spicy brown mustard
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. garlic powder

Directions

Place beans and red pepper in a pot over 1 inch boiling water. Cover and steam 7--8 minutes or until crisp tender. Meanwhile, in a bowl, whisk together the remaining ingredients. Transfer bean mixture to a serving bowl; add vinaigrette and stir to coat.

Yield: 9 servings.
