  • 5 boneless, skinless chicken thighs
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 tsp. ground cumin
  • 1 1/2 tsp. ground coriander
  • 6 cloves garlic, peeled and smashed
  • 1 tsp. grated ginger
  • 1 jalapeno pepper, chopped
  • Zest of 1 lemon
  • 2 Tbs. tomato paste
  • 1 Tbs. water
  • Oil, as needed

Toss the chicken thighs with the salt and pepper. In a food processor, combine the cumin, coriander, garlic, ginger, lemon zest, peppers, tomato paste, and water. Pulse until it is liquid. Add oil if necessary. Toss with the chicken. Marinate the chicken in this liquid for up to 24 hours. Grill on high heat for 4 minutes on each side.
